Chicken Curry

Curry Chicken is great with Tumeric Rice as I mentioned before.  I prepare this simple chicken curry using ready bought curry meat powder which i make into a paste with alittle coconut milk and fry in a wok together with the minced shallots and garlics. Enhance the flavour with spices such as cloves , cinnamon and curry leaves.

Ingredients:

1 chicken,cut into bite size pieces
1 teaspoon salt to rub chicken
3 large potatoes, cut into wedges
10 small shallots, minced
1 clove garlic, minced
1 piece ginger, 3cm long
2 packets meat curry powder, 20 gm per packet
4 cloves
4 cm long cinnamon stick
1 rice bowl thick coconut milk
1 liter water
1 teaspoon salt
1 teaspoon sugar
4 tablespoon oil

Method:

Rub chicken pieces with salt and set aside. Add oil in a wok and put in the minced onions and garlics. Fry until fragrant. Add in the curry paste, cloves and cinnamon stick. Stir-fry to mix and fry till fragrant. Put in chicken pieces and fry further 3 minutes. Add the potatoes and a branch of curry leaves. Add water and cover the wok to cook meat and potatoes until soft for 25 minutes. Take out the cover and add in the thick coconut milk and simmer for futher 5 minutes. Add salt and sugar to taste. Dish out and serve with glutinous rice or white rice.

Fried Chicken in Tangy Orange Sauce

I use two chicken thighs for this dish and separate upper and lower parts into four pieces to serve four persons. Try to take out the bones if you have time or you may leave the bones in tact. My daughters and their kids love this dish.

Ingredients:

2 chicken thigh, cut into 4 pieces
1 tea spoonful salt and dash of pepper
1 egg slightly beaten
1 cup cornflour
oil for deep frying
1 teaspoon minced garlic

Orange Sauce:

1 cup orange juice
1 teaspoon Maggi granulated Chicken Stock
1 tablespoon sugar or to taste
1 tablespoon cornflour mixed with 2 tablespoon water
4 orange slices
cooked broccoli to line the dish

Method:

Cut criss-cross lines on surface of chicken meat and marinate for 10 minutes. Lightly coat chicken with egg. In a clean plastic bag, pour in cornflour and shake the chicken pieces so that the chicken will coat evenly with flour. In a wok put in oil enough to fry the chicken pieces. Wait till the oil is hot before putting the chicken in. Fry untill golden brown. Drain and put on a dish.

Remove the oil and leave 1 tablespoon oil in the wok . Fry the garlic and add in the orange sauce. Bring to boil. Thicken the sauce with cornflour mixture and simmer for 2 minutes. Spoon the sauce over the chicken . Garnish with broccoli and orange slices.

The Lesser Known Benefit of Tomatoes

We commonly know that tomatoes are rich in vitamin C and many other minerals.  It is great as salads and appetizers.   Do  you know that tomatoes and tomato-based foods such as spaghetti sauce and ketcup help to prevent prostate cancer?  According to the results of a new study by the National Cancer Institude in Washington , 47,000 American men who are given two servings of tomato soup or tomato sauce a week are effective in cutting the risk of postate cancer by 24% to 36%.  Lycopene, a compound found in tomatoes maybe effective to lower cancer rates. The study strongly indicated that some thing in tomatoes is a powerful anti-cancer agent.  It can be used in many ways such as cooking and boiling or use in salads.

Simple and Tasty Fried Rice Noodles

Rice Noodle is very versatile. You can cook them is many ways. This is one simple way to prepare a wholesome meal for the whole family.

Ingredients:

250 gm rice noodles, soaked to soften and put aside. (this recipe will go well with any type of noodle)
100 gm medium size prawns
100 gm. meat, chicken or lean pork
100 gm cabbage, cut into strips of 1/2 inch wide
1 rice bowl of bean sprouts
3 pips garlic
5 tablespoon oil

Mixed sauce:
2 tablespoon light soya sauce
1 teaspoon black thick soya sauce
pepper and salt to taste
1/2 rice bowl of water
1/2 teaspoon sugar

Method:

Add half of the oil into a wok. Fry half of the minced garlic for a minute. Add meat and stir awhile to fry till done. Put aside. Add in the prawns and fry till cook. Dish out.

Add the cabbage strips and fry awhile. Stir in the bean sprouts. Fry for 2 minutes . Dish out.

Add the remaining oil and fry the garlic till light brown. Put in the noodles, stir-fry and pour the mixed sauce over the noodles. keep stirring and mixed evenly. Add in meat and prawns and the the vegetables. Mixed well and serve.

Other types of noodles can be prepared in this way.
