Chives are versatile herbs which can be used for many uses; such as stir-fried, soups, stew and salad. Chives can be grown easily in your garden and also can be obtained in grocery store and super markets. They have insect repelling properties which can be used to control pests in the garden. Do try this simple dish.

Ingredients:

500 gm chives, cut into 2 cm lengths
150 gm chicken breasts, cut into slices
3 crushed garlic
2 teaspoon cornflour
2 tablespoon light soy sauce
1/2 cup shelled prawns
salt and pepper to taste
1 teaspoon sugar
3 tablespoon cooking oil

Method:

Season prawns with sugar. Rub cornflour over chicken slices and set aside. Heat a wok till very hot. Add cooking oil and fry the garlic. Add meat and prawns and stir fry for five minutes until cooked. Add soy sauce and 2 tablespoon water. Heat through and toss about. Then add chives. Stir well and and turn on to a serving dish.

Chives belong to the onion family. Unlike the onions, no large bulbs are form underground, thus the leaves that have the onion flavour. Chives grow in clumps like grass, long thin leaves and up to 12 inches.

Garlic chives also known as “gau choy” in Chinese. Garlic chives have garlic flavour and is extensively use in oriental dishes. Chives can be stored in refrigerator in plastic bag for up to one week. Do not wash chives as excessive moisture may rot the chives.

If you are growing chives in your garden or a container, do not pull them fromm the soil at all. Simply cut the leaves with scissors down to 2 inches above the ground as needed. If you must cook them, add them last just before serving. Sprinkle some chopped chives on the soup, will make it delicious.

Chives are high in Vitamins A, C, potassium and calcium, and its sulfur compounds have anticbiotic properties.

Chicken wings are favourite of the old and the young whether they are grilled,fried or barbequed. They make a great snack. Here i marinate the wings overnight in the refrigerator to allow ingredients to be absorbed.

Ingredients:

8 chicken wings
2 tablespoon honey
2 tablespoon five-spice powder
2 tablespoon Chinese rice wine
1 tablespoon kicap manis or blacksoya sauce
1 tablespoon light soya sauce
salt to taste

Method:

Combine all the ingredients and mix thoroughly. Refrigerate the marinated chicken wings overnight. Place marinated chicken wings in a baking tray and grill in a pre-heated oven at 180 degrees celsius until the wings are crisp and golden brown. Garnish with cucumber slices.

Bean curd or tofu can be prepared in many ways.It can be used as in salad, stir-fries, soup, and deep-fries. Tofu can be easily spoiled if not refrigerate properly during trasportation. Any sour taste or odour is a sign of spoilage and staleness. Once purchased, unpack tofu and keep it in the refrigerator. For this salad i bought the firm white tofu. This is a vegetatrian dish.

Ingredients:

4 pieces tofu, cut into 4 pieces on each piece
300 gm cabbage, sliced thinly
1 green capsicum, sliced thinly
1 red capsicum, sliced thinly
2 spring onion, cut diagonally about 1 inch length
2 stalks fresh coriander,chopped
2 tablespoon lime juice
2 tablespoon olive oil
1 tablespoon sesame oil
enough oil for frying

Method:

Heat some oil in a frying pan till hot, fry tofu till golden brown for about 2 minutes on each side. Drain and put aside.

In a mixing bowl, combine olive oil, sesame oil,light soya sauce, chopped ginger and lime juice and mix well. Add all vegetables and tofu and mix well with the sauce. Add salt, sugar and pepper to taste. Serve with rice.
