For this recipe, I use medium-sized prawns so that they are easily cooked. Medium-sized
prawns are now available in abundant in the super markets at offer price most of the time.
My grand children like to eat this dish when they come homet to visit me.
Ingredients:
100 gm prawns, cleaned and deveined
4 eggs
salt and pepper to taste
3 tablespoon cooking oil
Method:
Beat eggs with fork until frothy. Heat a pan until hot, add oil. When oil is hot, add
beaten egg slowly until cover the whole pan. When the eggs are just set, spread the prawns
over half the omelette. Reduce to low heat. Fold omelette over to cover filling. Then cook
for a minute until lightly brown on both sides. Serve immediately

For this dish, I am using the popular Lee kum Kee Ma Po sauce which is a spicy bean sauce to cook this stir-fried chicken with red pepper and spring onions. This dish serves 4 persons.
Ingredients:
300 gm chicken breast, deboned and cut into cubes(2 cm)
1 teaspoon sesame oil
1 red bell pepper, cut to cubes(2 cm)
2 stalks spring onion, cut into 3 cm length
1/2 bottle Lee Kum Kee Ma Po sauce
salt to marinate
2 tablespoon cooking oil
Method:
Marinate chicken with a teaspoon of sesame oil and a pinch of salt. Put aside.
Heat a wok until very hot. Add in 2 tablespoon oil and stir to coat. Drop in the chicken fillet and stir-fry until chicken is cooked. Add red pepper and spring onion and 1/2 bottle of Lee Kum Kee Ma Po sauce. Stir well until heat through. Dish out to serve.

Seafood lovers can have a taste of stuffed squids. Here is a simple way to stuff the squids with fish paste. Fish paste is available in wet markets. The squids are cleaned and the skin, eyes and ink sac are discarded with the tentacles still attached.
Ingredients:
500 gm squid, cleaned with tentacles attached
100 gm fish paste
salt and pepper to taste
1 beaten egg
enough cornflour to coat
enough oil for frying
Method:
Combine fish paste, salt and pepper in a mixing bowl. Stuff fish paste into squids, leaving only 3/4 full. Secure tentacles with toothpicks.
Dip the squids into the beaten eggs and then coat squids in cornflour. Heat a wok until very hot and put in enough oil to fry squids until they are cooked and lightly brown in colour. Place squids on the plate, garnished with cucumber slices and serve.

Here is mutton dish which is quick and fast to cook. This delightful recipe is best eaten with bread, chapati, roti canai and rice. Those who are health conscious, will use evaporated filled milk instead of coconut milk.
Ingredients:
500 gm minced mutton
50 gm peas
2 potatoes, cut into cubes
50 gm cauliflower, cut into cubes
2 tomatoes, cut into wedges
3 tablespoon oil
3 tablespoon meat curry powder
3 tablespoon minced garlic
3 tablespoon minced ginger
1 big onion, cut into wedges
2 sticks cinnamon
1 star anise
1 big onion
4 cardamons
200 ml evaporated milk or coconut milk
2 cups water
salt to taste
Method:
Heat oil in a pot, and fry the spices and also the bay leaves until fragrant. Put in the minced garlic, ginger and the big onion. Stir-fry awhile and add in the minced meat. Continue stirring until the meat changes color. Add in the mixed vegetables and coconut milk or evaporated milk and water. Bring to the boil. Lower heat and simmer till the vegetables are cooked. Add salt to taste. Dish out to serve.
