Stewed Rice with Chicken and Mushrooms

My elderst daughter, her husband and two kids are planning a vacation in December. I suggested to her to rent a vacation home Orlando which is the best choice. My daughter is excited about it and make her booking. Encantada’s town vacation homes attracted her, a brand new Mediterranean style two-storey with three bedrooms and 2.5 bathrooms and fully equipped kitchen with major appliances are just ideal to stay with six in a family including my husband and I. Encantada is a gated community situated in the center of Orlando and is very close to all the attractions and excitement. I can go to nearby grocery stalls to buy ingredients to cook simple dishes when we stay home to relax and one of the dishes I wish to cook is Stewed Rice with Chicken and Mushrooms.

Here is the recipe:

Ingredients: Serve 6 persons

1 big plate of cooked rice
300 gm chicken breast meat
1 tin mushroom cut to pieces
500 ml chicken stock cooked with 1 cube chicken essence (Knorr Swiss)
1 tablespoon chopped onion or garlic
1 tablespoon wine or brandy
salt and pepper to taste
2 tablespoon cooking oil
1 tablespoon cornflour mix with 2 tablespoon water

Method:

Cut chicken meat, and mushrooms into strips. Season them with salt, pepper, wine or brandy.
Fry chopped onions or garlic for 3 minutes and add chicken meat, mushrooms and stir-fry for 3
minutes and add chicken stock. Bring to boil and thicken with cornflour mixture Simmer further 5 to 10
minutes. Spread this mixture over rice and serve while is hot.

Hamburger Steak

Hamburger refers to the cooked patty of ground meat. The patty alone is called a burger and ham

does not refer to “ham”. Minced beef is normally used but any other meat can be use too.

Hamburger steaks are made more delicious with a little wine or brandy added to the steak.

Ingredients:

800 gm. minced beef
1/2 cup fried chopped onons
2 eggs beaten lightly
salta nd pepper to taste
1 teaspoon nutmeg
3 tablespoon red wine
1 teaspoon sugar
2 tablespoon wheat flour
6 tablespoon butter

Method:

Mixed minced meat with fried chopped onions. beaten egg, salt and pepper, nutmeg, and sugar.

Work the minced meat mixture into a ball, then flatten it and divide equally with a knife. This

will be your patties to decide how big you want your burgers to be. Shape into thick round

steak, sprinkle with flour or breadcrumbs on top and fry in hot oil or butter for 5 to 8 minutes

on slow fire. Serve with frying butter and wine or with plum sauce and chilli sauce on your

toasted bun. You can garnish with mashed potatoes, green peas, diced carrots and slices of

tomatoes.

Pear Ginger Fish with Lemon

There are many types of pears in the supermarkets. Most commonly seen in the supermarkets are

the ya pears, su pears, sweet pears, crystal pears and packham pears which are crunchy, sweet

and white flesh. I use the ya pears to add in salads and meat dishes and also stir-fries.

Ingredients:

Fish Marinates:

500 gm fish fillet
salt and peppers to taste
2 tablespoon cornflour
1 teaspoon minced garlic and ginger
1 beaten egg
1 pear, cut into cubes
4 lemon slices
1 tespoon sesame oil
1/4 cup cooking oil
1 tablespoon chopped parsley and spring onion to garnish

Sauce:

3 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon soya sauce
1/2 cup water
1 teaspoon cornflour with 1 tablespoon water to mix

Method:

Marinate fish fillet with beaten egg, salt and pepper, mixed ginger and garlic and cornflour.

Set aside or chill for 30 minutes. Heat a non-stick wok until hot and add in fish fillet to fry

till done. Remove and drain well. Combine sauce ingredients in a sauce pan and simmer sauce to

thicken. Add lemon slices, pear cubes and sesame oil. Toss to mix and heat through. Pour on to

fish fillet and garnish with parsley and spring onion.

Stuffed Green Bell Pepper

Choose green bell peppers that are fresh, firm and crisp and I prefer the medium size to be

stuffed with meat. Soak them in water to get rid of chemicals if any. Rub them with some salt

and rinse them. Put aside to use later.

Ingredients:

300 gm green peppers
100 gm lean pork or chicken meat
salt and pepper to taste
2 to 3 tablespoon cooking oil
100 gm yam (boiled till soften and mashed finely)
20 gm dried shrimps (chopped finely)
2 eggs
1 tablespoon cornflour

Method:

Chop the chicken or lean meat finely. Add salt, pepper, cornflour, eggs, dried shimps, boiled

yam and mixed evenly. Cut the green peppers into halves and remove the seeds. Stuff the meat

mixture into each half of the green peppers until finish. Heat oil in a pan and fry peppers with

meat mixture in oil till done. Serve with chill sauce.
