Beancurd salad
posted in Vegetable dishes |Bean curd or tofu can be prepared in many ways.It can be used as in salad, stir-fries, soup, and deep-fries. Tofu can be easily spoiled if not refrigerate properly during trasportation. Any sour taste or odour is a sign of spoilage and staleness. Once purchased, unpack tofu and keep it in the refrigerator. For this salad i bought the firm white tofu. This is a vegetatrian dish.
Ingredients:
4 pieces tofu, cut into 4 pieces on each piece
300 gm cabbage, sliced thinly
1 green capsicum, sliced thinly
1 red capsicum, sliced thinly
2 spring onion, cut diagonally about 1 inch length
2 stalks fresh coriander,chopped
2 tablespoon lime juice
2 tablespoon olive oil
1 tablespoon sesame oil
enough oil for frying
Method:
Heat some oil in a frying pan till hot, fry tofu till golden brown for about 2 minutes on each side. Drain and put aside.
In a mixing bowl, combine olive oil, sesame oil,light soya sauce, chopped ginger and lime juice and mix well. Add all vegetables and tofu and mix well with the sauce. Add salt, sugar and pepper to taste. Serve with rice.
