Claypot Lamb
posted in Other Meat Dishes |Lamb or mutton requires a longer time to cook. It is perfect for stews and curries. if you find lamb smells unbearable, cook it with more ginger slices or add ginger juice.
Ingredients:
1 kg lamb cut into bite-sized pieces
100 gm ginger sliced thinly
2 carrots cut to bite-sized pieces
2 potatoes peeled and cut into wedges
30 gm wood ears or mok yee
100 gm Chinese mushrooms (soaked)
1 tablespoon crushed garlic
4 tablespoon oil
1 tablespoon sesame oil
Seasoning:
3 tablespoon oyster sauce
1 tablespoon salted red beancurd (nam yue)
1 teaspoon sugar
1/4 cup Chinese rice wine
dashed of pepper
salt to taste
Method:
Heat oil and sesame oil in a claypot. Fry ginger and garlic till fragrant. Add salted beancurd and lamb cubes. Stir for five minutes and add the seasoning. Drain the mushroom and add in the mushroom stock. Bring to a boil and add in mushrooms and potatoes. Simmer till tender. Add in carrots, woodears and bamboo shoots. Cook another ten minutes. Serve hot and garnish with Chinese celery (Kan choy) and chillies.
