Fried Chicken Breast with Tumeric

Fresh tumeric is use in this dish.  Scrape off the skin of the tumeric and is pounded finely to coat the chicken and then fry.  This dish is generally served to new moms in confinement.

Ingredients:

4 piece chicken breasts
4 pieces broccoli
5 cm piece fresh tumeric or kunyit (pounded finely)
salt and pepper to taste
oil for frying

Method:

Rub chicken breast with salt and pepper and pounded kunyit. Leave aside 15 minutes.

Heat enough oil in a non-sticked pan. When oil is hot add the marinated meat and fry at medium

heat until done and golden colour. Drain and put on a serving plate.

Blanch broccoli in boiling water with a little oil. Remove and garnish plate with broccoli.
