Another favourite recipe of the bananas where you can use riped pisang emas or
perangan. You can make good use of stale bread to prepare it. This pudding is light and
fruity and my grand children love to eat.
Ingredients:
3 medium size banana, cut into slices
1 loaf of bread or 10 slices of bread
450 ml UHT milk
1 tablespoon vanilla essence
1/3 cup honey
3 large eggs
Grated rind of one orange
100 gm mixed dried fruits
2 tablespoon almond slices
8 red glaced cherries, cut into quarter
Icing sugar to dust
Method:
Trim crusts from bread and each slice cut into 4 squares. Arrange half loaf on the lightly
greased 30cm by 19 cm oven-proof pudding dish. Sprinkle half of the bananas, mixed fruits,
cherries and almonds on the bread. Meanwhile, lightly whisk eggs until foamy and beat in
honey, milk, vanilla essence and orange rind. Add half the milk mixture into the dish.
Then top with the remaining half and pour the remainder of the milk mixture. Bake in the
preheated oven at 175 degrees C. for 40 minutes. Dust with icing sugar and serve.
