Spicy Duck in Sauce

Ducks can be bought in super markets or wet markets. On a weekend when you go marketing, try to buy a duck and try out this recipe. Rub salt on the duck and rub thoroughly to clean. Rinse well. Discard the feet but do not chop of the head.

Ingredients:

1 fat duck
1/2 bowl red rice
5 stalks spring onion, each cut into half
1 piece cinnamon
1 piece thumb-size ginger, crushed
8 pieces star anise

Seasoning:

1 cup light soya sauce
3 tablespoon thick soya sauce
2 tablespoon Chinese wine (Hua Tiao chiew)
1/2 cup sugar
6 kg water

Method:

Boil red rice thoroughly in 6 kg water in a big pot. Remove red rice. Add spring onion, cinnamon, star anise and seasoning into the red soup. Bring to a boil. Lastly put in the duck and cover lid. Bring to a boil again, then simmer duck for 1 hour and 15 minutes or until meat is tender. Remove and cut into bite size pieces.
