Steamed Siakap Teochew Style

Siakap is a common tropical fish found in Malaysia. It is reared in ponds. Siakap or Trout is especially popular in Chinese restaurants. Here is a simple recipe.

Ingredients:

600 gm Siakap fish, cleaned
3 tablespoon minced ginger and garlic
200 gm ham choy (salted vegetable), cut into strips
1 tablespoon carrot strips
3 chilli padi, cut in halves
2 salted plums, discard the seeds
1/2 cup water
2 tablespoon chopped spring onion, parsley and chilly slices

Method:

Put the fish on the steaming plate and steam over boiling water in a wok. Meanwhile
in a sauce pan, fry garlic and ginger. Add in ham choy, carrot strips and chilly padi.
Add water and salted plum. Stir-fry to mix. Simmer for 5 minutes. Add salt and pepper to taste. Pour the gravy over fish and steam further 15 minutes. Garnish with spring onion. parsley and slices of chillies. Serve hot with rice.
