Stir-fried Beef with red Capsicum and Snow Peas

The juicy red meat is best frozen for 30 minutes. Slicing is much easier and equally slice across the grain. However, never refreeze meat that has been defrosted. Do not fry the beef too long as to retain its juice.

Ingredients:

300 gm lean beef fillet, thinly sliced across the grain
100 gm snow peas, cut off top and tails
1 small red capsicum, cut into wedges
1/2 cup beef stock
2 tablespoon soy sauce
pinch of salt and pepper
1/2 teaspoon cornflour to marinate
1 teaspoon thin strips of ginger
1 teaspoon sesame oil
2 tablespoon cooking oil
1 tablespoon cornflour with 2 tablespoon water to mix

Method:

Marinate meat with soy sauce, sesame oil and pinch of salt and pepper, and 1/2 teaspoon cornflour. Put aside.

Heat a wok over high heat and swirl to coat the side of wok. Add ginger and fry for about 2 seconds and put in the marinated meat. Stir-fry for 2 minutes. Add in the snow peas and red capsicum and stir-fry for further 2 minutes. Add the stock and bring to boil. Sir in the cornflour mixture and thicken the sauce. Stir until the sauce boils. Dish out and serve with rice.
