Stir-fried Chicken with young ginger

Busy mothers can cooked this nourishing dish in a jiffy for their children after work. Defrost chicken before the day if it is in the freezer. To defrost the meat just put below the area in the fridge where it is not so cold.

Ingredients:

500 gm chicken, cut into bite-size pieces
2 tablespoon cooking oil
2 - inch size young ginger, sliced thinly
Seasoning sauce:
2 tablespoon light soya sauce
1 tablespoon thick soya sauce
2 tablespoon oyster sauce
11/2 teaspoon sugar
salt and pepper to taste
1/2 cup water
1 tablespoon cornflour and 1 tablespoon water to combine
1 tablespoon chopped spring onion and coriander leaves

Method:

Heat oil in a deep sauce pan or wok. Fry ginger till fragrant. Add in the chicken pieces and stir - fry frequently until chicken changes colour. Add in the sauce and water and bring to boil. Simmer until chicken is well cooked. Thicken the sauce and dish out. Garnish with spring onion and coriander leaves.
