This is a nourishing soup. Catfish can be available in the wet markets and super markets. The fish is very slimy. You have to scald with boiling water to clean it. Then rub with salt all over to clean again. Rinse and put aside for later use.

Ingredients:(serves 5 to 6 persons)

500 kg catfish, cleaned and cut into big pieces
500 gm black beans, rinsed and clean
1 piece dried tangerine peel
50 gm ‘tai tau choy’(pickled Chinese salted vegetable)
1 thumb-sized ginger, smashed
3 liter water

Method:

Add water and black beans, pickled vegetable, ginger and a piece of dried tangerine peel into a stainless steel pot and bring to boil. Add in fish and continue to simmer for 2 hours. Season with salt and serve.

A simple balance diet of protein, carbohyrate and fibre is the nutrition of the day. Here you just blanch prawns in boiling water to cook them and blend the rest of the ingredients together. You need just 30 minutes to prepare this dish.

Ingredients: Serves 3-4

300 gm prawn, peeled and deveined
1 Japanese cucumber, cut in cubes
1 red bell pepper, cut in cubes
1 tablespoon sweet relish, ( availables in supermarkets)
1 tablespoon lime juice
2 tblespoon mayonnaise
pepper and salt to taste
1 teaspoon olive oil
2 cups cooked rice
2 tablespoon chopped chives for garnishing

Method:

Blanch prawns in boiling water until prawns turn pinkish and cooked. Remove and drain. In a mixing bowl, place prawns and vegetables and mix well with mayonnise and lime juice and oil. Add pepper and salt to taste. Scoop rice on to plates and top with the mixture of salad. Garnish with chives and serve.

Would you like to bake this cake for your children to eat? The texture looks liked a behive. For this cake, you need 1 can condensed milk. You need caramelized sugar syrup for the color of the cake.

Ingredients:

1 can condensed milk
250 gm castor sugar
500 ml water
250 gm butter
250 gm self-raising flour
1 teaspoon vanilla essence
7 eggs

Method:

Make caramel by heating sugar in a stainless steel saucepan until golden brown. Remove sauce pan from heat and pour in water slowly. Return the pan to simmer until caramelized sugar dissolves. Leave aside to cool.

Beat butter and condensed milk until creamy. In a seperate bowl, beat eggs until fluffy and add it to the butter mixture. Add vanilla essence and mix well. Fold in the flour and mix in the caramel. Pour the mixture into a lined and greased tin. Bake in a preheated oven of 180 degrees C. until cake is done by tested with a skewer.

A simple vegetarian soup with celery, beancurd and Chinese mushrooms. It just take about half an hour to get ready. You can buy the white beancurd or the fried type.

Ingredients:

2 pieces beancurb, each cut into 4 parts
30 gm shitake mushrooms, soaked and each cut into 4 parts
1 stalk celery. cut into cubes
4 cups water
salt and pepper to taste

Method:

Add water in a pot and bring to the boil. Add beancurd and mushrooms. Keep boiling for 10 minutes on high. Lower heat and add celery and add salt and pepper to taste. Serve hot.

Nowadays busy moms can cook a dinner in a jiffy when they come back home from work with Maggi ready mixes, In less than half an hour she can prepare her dinner for her family. Here is a simple dish using Maggi Keruntuk paste.

Ingredients:

75 gm Maggi Kerutuk Paste
6 hard-boiled eggs
4 large cooked potatoes, skin removed and cut into half
1 red chilli
1green chilli
1/2 cup thick coconut milk
1/2 cup ready fried shallots
1 1/2 cup water

Method:

Combine Maggi Kerutuk paste with water in a sauce pan over medium heat. Bring to the boil and lower heat and potatoes ,chillies and coconut milk. Simmer and stirring gently for 5 minutes. Add eggs ans stir to combine with the sauce and potatoes. Add fried shallots just before serving.
