Ingredients:

400 gm granulated sugar
50 gm golden syrup
50 gm butter
1 small can sweeetened condensed milk
25 gm Van Houten Cocoa
4 tablespoon water
100 gm chopped nuts

Method:

Grease a tin measuring 7 inch well. Put sugar,water, cocoa, syrup, butter and milk into a heavy saucepan. Heat slowly, stirring all the time till sugar dissolves and butter melts. Bring to the boil and cover with a lid for 2 minutes, then lift up the cover. Continue to boil steadily for 25 minutes, stirring frequently. Test by dropping a little mixture into a cup of water to form a soft ball. Stir in nuts and vanilla essence and cool to lukewarm. Beat hard until thick and creamy, then transfer to the prepared tin. Spread smoothly with a knife. Mark into squares and leave in the refrigerater until set. Cut up and remove from tin when cold.

The treatment for diarrhoea and dehyration in such children includes giving them plenty of fluid or water to drink, but the fluid or water is often contaminated by the bacteria in the their environment. The research scientists said that if these drinks can be flavoured with cordial, killing the bacteria, there is a potential to save many lives. But how fruit cordial can kill the bacteria, they just did not know. Maybe it is probably related to the the chemical content and acidity of the cordial, they said.

Here is a tip to travellers. If you happen to travel, prepare your drinks with cordial and let them stand for an hour. You can also put the drinks in the refrigerater if you wish before drinking. Letting them stand at room temperature is important. Immediate refrigeration slows the rate at which the bacteria are killed.

Fish steams with Chinese herbs are seldom eaten at home. Well, just try this dish and see how it tastes. Herbs used are Tong Sum, Yok Chuk, Pak ki, Kei Chee. Fresh and lively fish such as ‘talapia’ or any other fish of your choice can be used.

Ingredients:

500 gm talapia,cleaned
10 gm yok chuk, cut into 2 inch length
10 gm tong sum, cut into 1 inch length
10 gm pak ki
1 table spoon kei chee
3 red dates, cut into halves
1 liter chicken soup
2 tablespoon minced ginger
1 table light soya sauce
1/2 teaspon thick soya sauce
1 ablespoon sesame oil
2 tablespoon cooking oil
salt and pepper to taste
a few spring onions and parsley to garnish

Method:

Run hot water over fish and set aside. Bring water to boil in a wok. At oil, minced ginger, light and thick soya sauce to fish. Put in the fish to steam at moderate heat. Meanwhile wash and boil the herbs with chicken soup for 20 minutes. Put in 2 tablespoon rice wine. Add salt and a dash of pepper to taste. Pour gravy on to the fish and continue to steam for further 10 minutes. Garnish to serve.
