Steamed Yam Cake With Oats

Yam cake is my favourite snack. I hope busy mothers like to eat too. You can try this dish and prepare on a weekend or any public holiday. I have tried adding some oats to make a lovely crunch to this dish. It needs half an hour to prepare and steaming time will take about 45 mins. or until firm to the touch

Ingredients:serves 6

400 gm rice flour
100gm quick cooking oats
300 gm yam, shredded
6 cups chicken stock
salt to taste
1 tablespoon oil

Topping:

100 gm dried prawns, washed and drain
50 gm pickled radish (chye poh)
1 tablespoon oil
1 tablespoon minced garlic
2 red chillies, seeded and sliced
2 tablespoons chopped spring onion and parsley

Method:

Combine flour, oats and chicken stock to make a thin paste. Add yam, oil and mix well. Grease a round baking tray and pour the mixture for about 5cm thick. Steam the mixture in a steamer for about 45 minutes. Keep covered until ready to serve.

Meanwhile, heat a wok, add oil. Stir-fry garlic, dried prawns and radish until fragrant for about 2 mins. Spread over yam cake and garnish with sliced chillies, spring onion and parsley. Cut cake and serve. Eat with chillie sauce.
