The Goodness of Vegetables

Leafy green vegetables are among the most nutritious of all vegetables offering major benefits to the entire body, including your bones and heart, prevent cancer, boost your immune system and provide energy. Well, many people are not eating enough of vegetables nowadays. Vegetables are easy to prepare. You can stir-fry, steam, or prepare salads. Some of the vegetables you can get easily are mustard greens, icebeg lettuce, celery, bok choy green, brocoli, brussels sprout, spinach and cabbage to name a few.

Mustard Greens and brussels sprout have their rich source of vitamins A, C, E, manganese, folate and fiber which are popular anti-oxidizing agents. If you regularly take vitamin C-rich foods, like mustard greens and brussel sprouts may protect against rheumatoid arthritis, as well as your lungs and heart against diseases.

Spinach and bok choy are rich in Vitamin C, Vitamin K, calcuim,folic acid and iron. As study said, they can prevent cancers, especially colon, breast and lung cancers. Folate also lowers the blood level of a protein called homocysteine which can damage arteries.

Cruciferous vegetables like broccoli, cabbage, collard greens, cauliflower are also beneficial to health. They are rich in vitamins and minerals. As study said, they contain powerful compounds that may keep cancers away from our body. So you are advisible to eat three or more serving of cruciferous vegetables in your diet per week.

You have to start your kids eating vegetables early so that they will continue their healthy eating habits into adulthood. For some who do not like to eat vegetables, try to eat a few servings per week.
