Buttered Prawn With Egg Floss

Buttered prawns with egg floss are so delicious to eat. You can try to prepare at home in your spare time, where the whole family can enjoy the dish. Medium big prawns are just nice for this dish. Devein the prawns and keep the shells in tact.

Ingredients:

500 gms prawns
5 egg yolks, beaten
enough butter to use in frying
a few pieces of curry leaves
green small chillies (optional)
Evaporated milk

Method:

Add 3 table spoon butter in the wok and add 2 tablespoon cooking oil. Turn heat to medium and melt the butter. When the butter is hot, pour the yorks in the wok with swirlling movement and briskly stirring until it form floss and lightly brown. Dish out and spread on a grease proof paper on a plate.

On the wok, put a tablespoon butter and a little cooking oil to mix. Add prawns and fry until cook and crisp. Dish out.

Then scoop another 1 heap tablespoonful of butter to wok and stir briskly. Fry curry leaves and chopped green chillies if available. Fry till fragrant. Pour in evaporated milk, about a quarter can. Add salt and sugar to taste. Add a dash of MSG. Keep stirring to mix and bubbling hot. Add in the fried prawns and stir to mix evenly. Dish out on a serving plate. Spread the egg floss on pawns and serve.
