Salted Fish Head Curry

Buy a fresh salted fish head and ask to be chopped to pieces. You need three types of vegetables: long beans, brinjals,and cabbage. Soak the vegetables well before cutting. I bought the one whole small salted fish head for only Rm 6.00. Get a packet at least 300 gm of mixed curry paste in the wet market for cooking this curry.

Ingedients:

1 small whole salted fish head, cut to pieces
300 gm long beans, cut to 2 inch long
300 gm bringjal, cut into wedges
300 gm cabbage, shredded thickly
2 tomatoes, cut to wedges
6 small onions
1 whole garlic
300 gm curry paste
oil for cooking
3 lemon grass
a few curry leaves.
1 cup thick coconut milk, concentrated
1 liter water


Method:

Blanch all the vegetables in boiling water and put aside. Mince the onions and garlic. Fry fish head pieces for 2 minutes. Dish out and fry the minced onions and garlic for 2 min. Add in the curry paste and continue to stir-fry until fragrant. Add the smashed lemon grass and curry leaves. Pour 1 liter water and put in the fish head pieces. Put to high heat until the ingredients boil. Lower heat and simmer. Meanwhile add in the vegetables and coconut milk. Can add more water if you want more gravy. Simmer for 10 minutes. Add salt to taste. Serve with rice or noodles.
