Stir-fried Watermelon With Chicken Fillet

Do you know watermelon is a fruit that all parts are edible and taste good. The juicy red part is cut and eat straight away or blend into juice. The seeds can be dried and eaten as snacks or ‘kua chee’ in Chinese.? Some of you probably do not know that the watermelon skin can be used for cooking. Now, before you discard the watermelon skin next time, think about it. Do you know that watermelon skin has detoxification and purifying properties? Try this simple recipe using watermelon white part of the skin:

Ingredients:

300gm watermelon white parts, cut into strips
100 gm chicken fillet or streaky pork. cut into strips
1 red chilli cut into strips
1 green chilli cut into strips
2 tablespoon oil
1 tablespoon ginger and garlic
20 gm raw peanuts
1 tablespoon cornflour and 1 tablespoon water mixed.

Method:

Marinate watermelon cubes with 1 tablespoon salt for one hour. Then blanch watermelon in hot boiling water. Squeeze try and put aside.

Marinate chicken meat with 1 teaspoon salt and 1 teaspoon cornflour and put aside.

Heat 3 tablespoon oil, fry the raw peanuts till crispy. Dish out and put in absorbent paper to drain the oil. Discard the oil.

In a clean wok, add 2 tablespoon oil. When hot add in the chicken strips and fry until cooked. Gather the meat to the side of wok. Put in the garlic and ginger to fry. Add in
the chillies and the watermelon skin. Stir-fry for 3 minutes and drizzle in 3 tablespoon watermelon juice. Add in light soya sauce, salt and pepper to taste. Thicken the gravy cornflour mixture. Dish out and spread the fried peanuts on the dish.
