How To Make Chicken Fajitas

In this dish I use chicken breasts to marinate with Tumix seasoning sauce, soya sauce and mustard powder for one hour before pan-fry with cooking oil till lightly brown on both sides.Tumix seasoning sauce is available in supermarkets.

Ingredients:

400 gm chicken breast(deboned)
1 1/2 tablespoon Tumix Chicken seasoning
4 teaspoon cooking oil
1 teaspoon light soya sauce
1 teaspoon mustard powder
60gm sweet peas
water

Method:

Pat dry chicken breast with paper kitchen towel and put aside. Blanch the sweet peas in hot water, drain and put aside. Then mix together the seasoning, soya sauce and mustard powder. Coat chicken breast with the mixed sauce and marinate for one hour.

Heat oil in the frying pan and when hot , slowly add in the meat and fry on low heat until brown on both sides. Remove on a serving dish and line with snow peas. Serve immediately.

Here is a taste of spicy chicken for those who like to eat. When you choose a chicken in the market or hypermarket, you can ask the attendant to cut into pieces for grilling. For this recipe, you can replace chicken pieces with wings.

Ingredients:

1 whole chicken cut into serving pieces of 6 cm wide

A
3 dried chilli shoaked to softened
5 shallots
3 cloves garlic
3 cm piece ginger

B
1/4 cup water
1 tablespoon Maggi Chicken Stock Granules
1 tea spoon Maggi Dark soya sauce
2 tablespoon sugar or to taste
salt and pepper to taste
Lettuce and tamato slices to garnish

Method:

Mince ingredients A with a mincer until fine. Combine ingredients A and B in a bowl, add chicken and mix well. Let it marinate for half an hour. Arrange chicken on aluminium foil and grill over moderate heat about 15 minute or until chicken is done. Garnish with lettuce or tomato slices.

Sometimes you need a quick dish of chicken for dinner. There are ready cut dry thin strips of
mushrooms in grocery stall. You can buy and store them in kichen cabinet. Here is a dish to dry. I use half a chicken and is enough for 3 to 4 persons.

Ingredients:

Half achicken, cut into bite-sized pieces
30 gm of mushroom strips, rinsed and clean,
cover with 100 ml warm water and keep it for stock.

Sauce for Seasoning:

1 tablespoon chopped ginger
salt and pepper to taste
1 tablespoon light soya sauce
1 tablespoon dark soya sauce
1 tablespoon oyster sauce
1 teaspoon concentrated Maggi chicken stock
1 tablespoon cornflour
1 tablespoon oil
1 teaspoon sesame oil

Method:

Put in the seasoning ingredients and mix well. Add in the mushroom strips and water and mix well too. Put the mixture of meat in a steamer and steam for 25 minutes. Serve with rice.

You can buy a chicken easily at a supermarket. Rub salt over chicken inside cavity and skin and

rinse well. Season the chicken with salt, five-spice powder, light soya sauce and cornflour.

Hang up the chicken with a string to drip excess liquid for half an hour before you deep fry the

chicken in hot oil.

Ingredients:

1 whole chicken
salt to taste
1 tablespoon five-spice powder
2 tablespoon light soya sauce
enough cooking oil to deep fry chicken

Sweet and Sour Sauce:
3 tablespoons apricot jam
1 tablespoon applecider

Method:

Rub salt, five-spice powder,light soya sauce and cornflour over chicken and hang up to drip

excess water for half hour. Heat a wok until hot and slowly put in the chicken to fry for about

20 minutes or till chicken is golden brown and cooked. Drain chicken and cut to big pieces and

arrange neatly on a plate. Serve while is hot with sweet and sour sauce.
