Chicken Salad

Prepare your chicken salad at home for lunch or dinner. You can eat with bread bun and rice. You can go to the market and get fresh chicken breast or go to a shopping mall to get it. Write down a list of the ingredients to prepare the dish.

Ingredients: 4 persons.

600 gm cooked chicken breasts, shredded
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1/2 cup chopped celery
1/2 cup water chestnuts.
1/2 cup sliced small red onion
1 1/2 cup mayonnaise
salt and pepper to taste
2 tablespoon apple cider (optional)

Method:

Soak vegetables, onions and water chestnuts for awhile and rinse them clean. Cut them into small cubes and slice the onion thinly. Combine all the ingredients in a large bowl. Stir in the mayonnaise, pepper and salt to taste. Add in the apple cider if you want the salad to taste sour. Mix well. Cover and chill before serving.

Chicken in Soya Sauce and Red Wine

Try this chicken recipe and is worth the effort. The chicken gravy is great when serve with rice. Keep the remainder gravy in the fridge and reuse for the next round. The flavour will become more tasty with each time it is cooked. You can add this sauce to flavour other dishes or add to noodles.

Ingredients:

1.5 kg chicken, cleaned, removed excess fat
1 1/2 cups water
1/2 cup dark soya sauce
1/4 cup light soya sauce
1/2 cup red wine
1 tablespoon seseme oil
2 tablespoon crushed rock sugar
1 large clove garlic
8 slices fresh ginger
2 spring onion, cut into 1 inch size
2 whole star anise

Method:

Choose a pot just enough to hold chicken so that it is just submerged in the cooking liquid. Put the chicken into with breast down and add all the ingredients except the seseme oil. Cover chicken bring to the boil and slowly turn the heat down to simmer chicken gently for 15 minutes. Slowly turn chicken over without piercing its skin. Replace the lid and simmer chicken for further 15 minutes, basting chicken for every 5 minutes. Turn off the heat and leaves chicken submerged in liquid in the pot for 45 minutes. Lift chicken out, and drain away the liquid back into the pot. Brush the chicken all over with seseme oil. Chop the chicken into bite-sized pieces and assemble on the serving plate. Serve some of the gravy as dipping sauce.

Garlic Chicken

Here is a dish that is simple to prepare for the busy mothers. For a family of four, two teeage children and the parents, a medium-size chicken is more than enough for dinner. A dish of blanched green vegetable or salad to accompany the chicken.

Ingredients:

1 medium ‘kampong’ chicken, cleaned
4 pips garlic
2 slices ginger
3 tablespoon honey
1 teaspoon salt

Method:

Mince garlic and ginger. Add salt and honey and mix evenly. Rub all over chicken. Place chicken in a roasting pan. Put in the moderate oven for 2 hours or until tender. Slice or cut into pieces with a scissor. Serve while is still hot with salad and chilly sauce.

Pan -Fried Chicken Breast

In this dish I use chicken breasts to marinate with Tumix seasoning sauce, soya sauce and mustard powder for one hour before pan-fry with cooking oil till lightly brown on both sides.Tumix seasoning sauce is available in supermarkets.

Ingredients:

400 gm chicken breast(deboned)
1 1/2 tablespoon Tumix Chicken seasoning
4 teaspoon cooking oil
1 teaspoon light soya sauce
1 teaspoon mustard powder
60gm sweet peas
water

Method:

Pat dry chicken breast with paper kitchen towel and put aside. Blanch the sweet peas in hot water, drain and put aside. Then mix together the seasoning, soya sauce and mustard powder. Coat chicken breast with the mixed sauce and marinate for one hour.

Heat oil in the frying pan and when hot , slowly add in the meat and fry on low heat until brown on both sides. Remove on a serving dish and line with snow peas. Serve immediately.
